I wrote to a few on-line companies to see what their policies are on organic, raw, dehydrating, freezing, etc. I received the following reply from Jaffe Bros (http://www.organicfruitsandnuts.com/default.asp)
"There are no additives in any of our Organically Grown and/ or Produced foods... The Sun-Drying process entails removing the pits where applicable and laying the fruit out on trays... It is a practice of almost all of our growers to freeze each dried product for at least 10 days to eliminate the likelihood of infestation. Enzymes are not harmed by the freezing process...
Dates are a fresh fruit and are not dried... Raisins are sun-dried, but we only have the Thompson Seedless variety in stock, presently... We have not carried Calimyrna Figs for several seasons because there has been a deterioration in the quality of this crop... our Black Mission Figs are sun-dried as are the Smyrna Turkish Figs, Tomatoes, Bananas, and Apricots... Almonds are not heated or dried, but Walnuts are dehydrated to lower the moisture content to about 7% to avoid damage due to mold. The kiln used to dry the Walnuts exposes the nuts to about 110 degrees of heat over a period of several hours... Seeds, Pine Nuts, and Macadamia Nuts are not subjected to heat."
