Has anyone tried Alissa's "Cream Cheese"?
Or have other recipe to share?

Most recipes I've seen are made with both cashews and pine nuts. I don't care for the taste of creamed pine nuts though so I think just cashews or macs would work best.
If you want a sweet flavor, you might want to add a touch of honey or agave or a date. And pre-soaking the nuts might make it a bit too runny.
Usually just creaming up the cashews with a dash of water or citrus juice is enough to give it a similar texture and flavor though.

this is how I do it.
1 cup of cashews (soaked)
1 tsp lemon juice
dash of Celtic Sea Salt
blend in High speed blender until smooth, if you need to add a little water to keep it moving, that is okay, no more than a couple of tablespoons, then place into a glass jar, and place in the fridge, it will firm up over a few hours or the next day, it will have the consistancy of cream cheese, tastes alot like it too.
One of my favorite recipes, with this you can make sour cream with a bit more lemon and water, or dips, water and seasonings, mexican, cumin, chili powder, garlic, onion, or sweet dips, add pineapple juice, and some chunks, mmmmmmmm
you can make mayo out of this, just add a bit of water, 1 tsp vinegar, and 1/4 tsp salt or to taste, 1 tsp dried onion, and you have mayo.
etc. this is a great basic recipe to make lots of condiments from

Is it possible to substitute another kind of nut (other than macs) and still get the cream cheese to turn out? I don't wan't to use non-raw products and sadly, macadamias are not in the budget this month.

Just a little heads up on macs; I get mine on ebay and I don't think they are cheaper in any store I know of.
