I want to make something with these sunflower seeds for Vati's Day. I like them just plain, but I need to make something that I can share with everyone. I was thinking a patte or something to put in romaine leaves or thin squash strips. maybe? I am so horrible with recipes unless they are for something sweet lol. I just can't seem to find a recipe that I have all the ingredients for and I am afraid to tweak too much as I have had HORRIBLE experiences with that in the past. Lemon Herb Hummus
Oh, this is good - much better than the SAD version.
Serves 6-8 as a dip
Ingredients:
2 large zucchini, peeled and cut into large pieces
1 large avocado
1/4 C raw tahini
juice of 3 lemons
1/4 cup sunflower seeds, soaked for 1-2 hours
1/4 C pine nuts (or you can can use an additional 1/4 C sunflower seeds)
1/4 C olive oil
4 fresh basil leaves (or 1 1/2 tsp. dried)
1 full stem of fresh dill (or 1 1/2 tsp. dried)
2 T. honey
1 1/2 tsp. sea salt
1/2 tsp. minced garlic
Preparation:
Drain the sunflower seeds. Combine all ingredients in a vitamix or high-powered blender*. Process until smooth
Delicious Tuna-ish Pate~
1 c. soaked and drained sunflower seeds
1/2 c. soaked and drained almonds
5 T. water
3 stalks celery minced
1/2 sweet onion minced
4 T. mined fresh parsley
2 T. lemon juice
1/2 tsp. celtic sea salt
Put seeds, nuts and water in food processor, process till it pureed well, stopping to scrape down the sides till well blended.
Place in bowl and add other ingredients, stir till blended...chill!
Great on flax crackers, in lettuce wraps, etc...
Thai Salad
4 large cucumbers
Juice of 1 large lemon
1 bunch cilantro
1 medium onion diced
3 teaspoons hot curry powder
1 teaspoon salt (or to taste)
3 Tablespoons honey
1/4 cup olive oil
1 cup sunflower seeds (soaked for 2 hours)
Peel and slice the cucumbers into thin circles and transfer to a bowl. Finely chop the cilantro and mix with the cucumbers. Add the onion, lemon juice, and olive oil. Add the rest of the ingredients and mix well. Serves 5-8
Mock Meatballs
1 cup Brazil Nuts* (soaked 4 hours and rinsed)
1 cup sunflower seeds* (soaked overnight and rinsed)
½ a medium onion
1 Tbsp Nama Shoyu*
1 Tbsp. Miso*
1 tsp Celtic Sea Salt*
2 Tbsp fresh sage
2 Tbsp fresh rosemary
2-3 cloves garlic
Finely chop the Brazil nuts in a food processor, set them aside
Blend all the remaining ingredients except the sunflower seeds in the food processor until finely chopped, then add the sunflower seeds and process until it makes a pate. Mix this with the brazil nuts. If you really want them to be like meatballs make patties and dehydrate them for a few hours until slightly crusty. Otherwise enjoy like a pate

Those recipes sound great sport! Especially the lemon herb hummus! mmm. unfortunately I run into the problem of not having all the ingredients for any of them. For example for the hummus I don't have avocado, tahini, lemons, oil, honey, or sea salt. and thats like half the recipe. darnn

This one seems simpler. Remember that crushed sesame seeds can be used in place of tahini.
3 cups sunflower seeds, soaked 8-12 hours. Sprouted for 2-4 hours
1 cup fresh squeezed lemon juice
1/2 cup chopped scallions
1/4-1/2 cup raw tahini
1/4 cup liquid amino's, or 2 tablespoons nama shoyu, or pinch of sea salt with add'l water, or none at all
2-4 slices red onion, cut in chunks
4-6 tablespoons coarsely chopped parsley
2-3 medium cloves garlic, coarsely chopped
1/2 teaspoon cayenne pepper (or more to taste)
Soak sunflower seeds 8-12 hours, drain, allow to sprout for 3-4 hours (leave out on counter) then thoroughly rinse and drain removing as many of the thin inner husks that float to the top as possible. In a food processor, process the sunflower seeds, lemon juice, scallions, tahini, liquid amino's, onion, parsley, garlic and cayenne until the mixture is a smooth paste.
When thoroughly blended taste and adjust the seasoning. The pate will develop a stronger garlic taste in a few hours. Yields a large mixing
bowl of pate. (approximately 8 cups)

This is sunflower refried beans
4 cups soaked sunflower seeds (2 ½ cups before soaking)
½ cup flax oil, hemp oil, or olive oil
3 ½ tsp. onion powder
2 tsp. chili powder
2 ½ tsp. cumin powder
1 tsp. Celtic Sea Salt
1 Tbs. unpasteurized dark miso paste
3 Tbs. raw tahini
1 Tbs. apple cider vinegar
¾ cup pure water
Put all ingredients in a food processor and puree until creamy. Best served warmed in the dehydrator at 105 degrees.
(You can make "burritos" with lettuce as the shell and add some guacamole and salsa as well.)
Serves 8-10

1/2 c. walnuts, soaked overnight
2 c. sunflower seeds, soaked overnight
3 cloves garlic
1 tsp salt
1/3 c. olive oil
1/4 c. lemon juice
1 Tbl dry basil
1 c. celery, chopped
Blend ingredients in food processor until smooth.

mmm all these ideas you are giving me sound great. Next time we are grocery shopping I'll get all the ingredients for one and try one! The raw taco idea sounds like a great thing to share with my family. :)
Do you tihnk I could make a simple one with mostly sunflower seeds plus some pine nuts? maybe just add a little onion and garlic and kelp granules and basil or parsley? I don't know what else I could add...hmm ahh i don't know.
oh and I was thinking of putting some (runnier) on parsnip pasta and the rest keep thicker and make wraps. how does this sound?

no I don't, my family isn't big on spices or condiments. We've always eaten everything plain lol. I never even used mayonase or ketchup or salt or anything like that when I was little. lol

I think this sounds lovely! Sunflower seeds are so mild tasting, so I find that I can really go over board with garlic and herbs etc.
