View Full Version : HELP: Need summer squarsh recipes fast

I'm heading to a Hallelujah Acres pot luck (vegan, raw) on Monday. I've got LOTS of fresh summer squash and a little bit of zucchini to get rid of. I've been searching all over the internet for a good raw recipe. Any ideas.

BTW: I'm so glad I stumbled across this site. I'll refer it to my friends.

I had a lot of white squash and i peeled it and thinly sliced it lengthwise and diced some red peppers (sweet ones) and diced some avocadoes with diced sweet onions and a yellow tomato for color and add your favorite dressing.
Girl it was good, yes i forgot some seasoning of your choice and mix it up.
I put mine on a bed of butternut lettuce and loved every bite of it.

peel the squash with a vegetable peeler for more "fettucine" type noodles...mash up an avocado and essentially make guacamole...thinned out a bit...add tomatoes later on if you wish...spice as desired.

Let it sit for an hour and you have some fantastic zucchini fettucine!!

You can also make the noodles as already mentioned and then make the marinare sauce from Alissa's book, I have heard it should be good. What I do is that I make tomato "sauce". Well ripe tomatoes, sun dried tomatoes, a little garlic, olive oil, spices, maybe a couple of dates. I variate the recipe all the time but it always turns out just beautiful! :p

Butternut Squash Soup
1 and 1/2 cups water
2 cups butternut squash, diced
4 ribs of celery
2 Tbs. tahini
2 green onions
1/2 cup fresh basil
1/2 tsp. sea salt
1/2 tsp. paprika


Blend the water and half of the butternut squash. Add progressively the other half as well as the rest of the ingredients and blend. This is a sweet soup that will surprise more than one. It is ideally made using a heavy-duty blender such as the Vita-Mix.

Thanks for all your wonderful suggestions. I have made copies so that I can try a couple of them. For tonight however, I am going to do the following:

Use my vegatable peeler to make my squash into thin ribbons (like spaghetti). I will use a combination of yellow squash and zucchini. I will top that with the following dressing that comes from Rhonda at Hallelujah Acres.

Lemon Dressing
1/3 C. olive oil
1/3 C. honey
1/3 C. lemon juice
1 clove fresh garlic
1 t. oregano
1 t. basil

I tried this out and even my husband said it tasted good.
