View Full Version : need fast answer - buckwheat, and eek, dinner for unexpected guests

Ugh, so I just got a phone call that nine family members of my hubby will be in our area tomorrow, and could they all stop over in the afternoon and for dinner. :o
Well I'm doing it, I'm serving all raw stuff!!!! Muahahahaha!!!! It will be a delightful huge feast with lots of yummy food (I hope :p ), but I'm basically scrambling to get our house and yard in order (we are mid-reno!) and prepare the food.
What is the minimum time to soak buckwheat for stuff like crackers, cookies, pizza crusts before I can make the recipes?
This is sort of what I'm making
Maraw's burgers (I was already making a double recipe of them when the phone rang)
avocado/fennel/grapefruit salad
asparagus salad
sugar snap pea/carrot/mint salad
hummus and crackers
tapenade and crackers
little raw pizzas (but I don't call them pizza to sad people)
green salad
blueberry pie
pecan pie
some sort of decadent chocolate pie (need help with recipe for that too)
Prosecco and strawberries

I'd say 4 hours. I got that from "Raw Food Real World" and it works GREAT for me...no worries about the fermentation in the dehydrator.
Hope you all have a WONDERFUL time and that they LOVE the food! :)

thanks Rawkinlocs and each peach! I was first too busy, then too exhausted to reply!
everything was delicious, and hubby and I sure ate well the next day due to leftovers :D . Usually when we entertain I can't wait to get all the bad food out of the house, stuff that is not good for me that I try to avoid eating, but this was wonderful to have the house filled with all these great raw leftovers!!!
The kids really loved the food too, one of them was really excited about the chocolate pie, said with childhood genuineness as soon as he bit into it "Oh my god, this is SO good" and that it was the best chocolate pie he'd ever had :p . Hubby's parents were a little funny about the burgers (which is an excellent recipe Maraw!), sort of not getting over the concept that they're not eating meat, but they sure ate a lot of everything anyway. ALL the salads were really good. The avocado/fennel/grapefruit salad from Raw Food Real World is a really nice summer salad. I also added to the menu above my Mexican salad with fresh cut corn, avocado, hot chile peppers, sweet red peppers, fresh shallots from the garden, cilantro, chile powder, etc., which was really popular. It always seems to go over well with sad people.

LOL the dueling American Harvests, two of them side by side, my mom picked them up at second hand stores for me. I ended up inviting a few more family members to join us too, so I actually had every tray on both of those going!
I did manage to snap a couple pics of things, I'll try to post them later.
I didn't mention in my first post, they are all very big eating, food-centric traditional-type Italians (many with the health problems associated with that), so it was a little brave on my part to serve a raw feast! I just made sure there was tons of food and all beautiful stuff, (I tried to use some ingredients that they would be familiar with and like) and we all had a good time.
