I have eaten a few just right off the plant. Not too impressed. cooked they were some of my favorite foods. What can I do with them raw.
Recipes and ideas please help

Regular green beans can be kind of tasteless and starchy when raw. I can eat a few on a veggie platter, but they're not my favorite. Haricot Verts are a different thing though. They're sweet and tender. I remember last summer, a lady I know was telling me that some guy she worked with had a bumper crop of them so he brought some to work. People started eating them raw and they loved them so much they were begging for more. She said not one bean made it home because they were so good raw. I don't often see them here but I did find them in the store once already this season.

I dice them like you would a green onion and add them to salsas, relishes, and top salads with them. I have found some to have a strong flavor thats why I use them in smaller sizes & mix them w/ other items. They are great w/ corn relish/ or corn salsa. They go well in Green juices too.

Back in my SAD days, a few years ago, I planted a variety that's called 'Yard-long' stringbeans (sometimes called 'Asparagus beans"). These were incredibly sweet (and very easy to grow). Bet they would taste delish raw. (I'm in an apt. right now, with no room for veggies :( )

Green Beans juice great. I usually combine with carrot juice. They have a really mellow taste and lots of "green"

I LOVE GREEN BEANS!
Maybe you could put them in a smoothie or juice them!
At least they wouldn't be wasted! ;)

I put them in my salads. I have also juiced them and i eat them plain sometimes. If you don't like them plain, dip them in some raw hummus or some other raw dip.

Asian Long Bean Salad
2 cups long green beans
1 tomato, diced
1 big red onion, diced
1 cup shredded carrots
2 tbsp olive oil
1 lime juiced
apple cider vinegar
top with seasme seeds
I have this huge box of lovely organic green beans. They taste wonderful just raw, but I have sooo many, I'm looking for favorite recipes. There were some great ideas on this thread. Any others?

Moonstone, thanks for the Asian bean salad. I made it, and it was quite nice. I flavoured it with dill.
