Anyone have any experience with Jicama?
I bought a big one (not cheap) and was looking forward to making some spicy fries. I cut it open and it is brown around the edges. Is that normal?

I like Jicama..it sort of reminds me of a potato and an apple put together...I usually just chop it up and stick it in a salad

It shouldn't be brown around the edges unless you are referring to the peel.

Thanks you guys, I guess I am going to take it back. It was too expensive not too. I was looking forward to using it. Hard to find here. I will keep looking.

yep, jicamas should be totally white, and crispy and juice, the texture of an Asian apple pear, kind of like that too. but has the starchiness of a potato
Alissa uses them in her potato recipe and fries recipe.
but I didn't know they were expensive, at least they aren't here anyway, they do grow huge sometimes, I've seen them over 6 inches in diameter.
but I prefere to use the smaller ones, about the size of an apple or onion.
they are excellent, sliced, dehydrated and ground up to use as powdered sugar on sweets, very nice that way.

Yes, RP, this one was huge! Over six inches. Cost me over $5.00. I will now look for the smaller ones.
I heard you are coming up for the Sept. class. I live very close by, and am hoping to stop by after class one night and say hello. You will absolutely love class. It was amazing.
