for those of you who buy from either:
i'm trying to track down a source of truly raw nuts and spoke to people from both of these sources today. the guy from jaffe bros. understood fully why i was asking and claimed he gets the question often, however, he said that they buy their in shell nuts from so many different sources that he can't keep track of how they are all processed- he said that some are heated to keep them from molding. the lady from sun organic farm said the only in shell nuts that have been heated are the brazil nuts and pecans- to sterilize them as they are picked from the ground. she didn't sound, though, as if she fully knew what/why i was asking and so i don't completely trust what she said. nature's first law does have truly raw in shell nuts (they are sundried) but are much more expensive.

Sun Organic told me their raw nuts are really raw, but I don't know the details. I did get their shelled walnuts. I can't tell taste-wise the difference.

I usually get my nuts from Glaser Farms because they have lots of other products I can get at the same time & it seems to work out to be more cost effective than other places.

When I said I can't taste the difference I meant that normally I can't tell if any food is raw by taste. Would be helpful if I could. I guess I just have to trust the info I'm told as well as everyone's recommendations.

thanks for the replies.
i believe i will order from sun organic farm...i also ended up speaking with tracy glaser of glaser farms yesterday for almost an hour- she's very intense (to put it politely) and fanatical about their products, so i won't hesitate to support them as well in the future.

It's good that she believes in what she's doing & they have some amazing food esp. at their Farmer's Market. Now if they can just improve their e-mail customer service...

www.bulknuts4you.com also has a good selection with decent prices. They are located in Michigan which is nice for those of us on the east coast!

I posted this on another thread, but just realized it might be good here, too. I e-mailed Jaffe about their products and received the following response:

There are no additives in any of our Organically Grown and/ or Produced foods... The Sun-Drying process entails removing the pits where applicable and laying the fruit out on trays... It is a practice of almost all of our growers to freeze each dried product for at least 10 days to eliminate the likelihood of infestation. Enzymes are not harmed by the freezing process...

Dates are a fresh fruit and are not dried... Raisins are sun-dried, but we only have the Thompson Seedless variety in stock, presently... We have not carried Calimyrna Figs for several seasons because there has been a deterioration in the quality of this crop... our Black Mission Figs are sun-dried as are the Smyrna Turkish Figs, Tomatoes, Bananas, and Apricots... Almonds are not heated or dried, but Walnuts are dehydrated to lower the moisture content to about 7% to avoid damage due to mold. The kiln used to dry the Walnuts exposes the nuts to about 110 degrees of heat over a period of several hours... Seeds, Pine Nuts, and Macadamia Nuts are not subjected to heat.

I have e-mailed extensively over the past couple of weeks with Larry from Jaffe Bros and he was able to give me very specific information about each nut I have asked him about regarding the shelled nuts. I believe all are raw (including the cashews, which I am double-verifying by going to the original supplier) except the walnuts which are "dehydrated to lower the moisture content to about 7% to avoid damage due to mold. The kiln used to dry the Walnuts exposes the nuts to about 110 degrees of heat over a period of several hours...".

Thanks Veganman. Do you know if the same applies to unshelled nuts?

GilmoreGirl, this was your response to Jaffe Bros heating the walnuts to a temperture of 110 degrees. They are safe to eat and still raw. This is a quote directly from Alissa's book, page 41...."Cooking food to a temperature of 112 degrees Fahrenheit (this temperature feels warm to the touch) destroys all its enzymes"
A temperature of 110 degrees is still safe.
