View Full Version : Soaking almonds and mold

My mom is soaking some almonds to make almond milk. She said the directions said to rinse and then soak them for 48 hours before rinsing again and then keep in the fridge. This afternoon will be 48 hours and they started growing mold all over the top of them and the water as of yesterday afternoon.

Any advice. I don't know if they are even good to use if she rinses them off.

I remember soaking wehani rice (I don't even know if I'm supposed to, but this type was suggested for raw food diets from a website), and it started to mould. I rinsed it and what not, and ate it, and I felt kind of sick. I think the mould was inside of the rice too. The same thing happened with beans, but then again I was told not to soak beans, so maybe I was doing it wrong. I would be careful.

well, those directions are NOT ACCURATE!!!

for your mom, tell her to rinse them until the water runs clear, and taste one, if it tastes like yummy almonds, they are still okay, if not, toss the whole bunch.


this is how to soak almonds, place almonds in a bowl, cover with twice as much water, so the almonds are way under the water, put on kitchen counter, wait 4 hours, rinse three times, then cover with fresh water, do this every 4 hours, after 12 hours, you can use them

I've never heard of the 48 hour thing, maybe it is a type as 4 hours is correct.

Now you CAN let them soak as long as overnight, and still have them be okay, I just use the 4 hour rule, because alot of other nuts and seeds need to be rinsed after 4 hours, so I just rinse them all, also good for sprouts.

so, she MAY be able to save them.

She was using what she read in Alissa's book which says to use 3 cups dry amount and soaking time is 24-48 hours. It says almonds just need to be soaked for 1-2 days and then kept in the refrigerator in water. Change water daily. Will keep for 5-6 days.

She just tossed the 3 cups of moldy almonds. It was nasty.

yes, you CAN soak them for that long, but you do need to change the water at least daily, maybe this is what was meant in the book.


I can't say, all I CAN say is that the soak water must be changed frequently.

Yes, I have had almonds go bad on me too. I soak them overnight in lots of water, then rinse really well a few times. Then I put fresh water over them, cap the container and put it in the fridge. If I remember to change the soak water every day, they keep very well for several days. If not, then I get stinky scummy water with sludge in the bottom. YUK. Not too nice throwing out those expensive nuts. I have also drained them, put them on the counter ready to make them into something and then gotten called away-I put them back into the fridge without water, and they molded very quickly, like overnight.
Which makes me wonder, do they have a potential mold problem like peanuts?

once you remove the enzyme inhibitors on ANY nuts, they have a mold problem.

Yes, even within its soaking period, you rinse daily. I rinse and refill a few times each day and then I dehydrate and store.
