What is your favorite, simple thing to do with eggplant? I have a little one and I think it is going bad! I have heard of making "bacon" but I don't have oils or anything. Is there some sort of dip or pate sort of thing? or well I have no idea, lol. all ideas are appreciated :) thanks!

Today I went to the ONLY raw restaurant in Thailand and I had eggplant lasagana. It was thinly sliced eggplant with a layer of a creamy tomato salsa-esque sauce topped with mock guac. yummy. :cool:

Alissa has a recipe for eggplant pizza. The book is downstairs, but you could make a pesto sauce or a marinara with some nut cheese and dehydrate. We made it once, according to her recipe, and it was SOOOOOOO good. We loved it. I just bought some more to make it again.

thanks for the ideas. I have some pine nuts...so I'll blend some up with a bit of water...slice the eggplant, and add some fresh tomatoes and basil on top. sounds good to me but who knows. Normally I can't tolerate a lot of stuff mixed together...I have definately become more of a mono eater...but since we have absolutely NO other raw food in the house and wont be going shopping until tonight, I'll have to try this.

You can also slice eggplant very thinly, soak in salt water, and use as ravioli "pasta". It is particularly good with a macadamia (or cashew) cream filling made with garlic, lemon and thyme, and a red bell pepper marinara. Yum!

I made a pizza sauce put on the sliced eggplant dehydrated for quite awhile till warm softer, (you can use low temp oven or the sun) and that was yummy too.
