I want to sub the Cilantro (my dh hates it with a passion) any suggestions ?

How about parsley? I haven't actually made the falafel but parsley has a milder flavor and should combine well with the other herbs and spices.

I've used parsley when i didn't have cilantro and it was very good.
PS I also use it as a dip without dehydrating. Yum

I didn't have any cilantro when I made it (and find it to be a bit too strong of a flavor for me) so I put some spinach leaves in instead. Gave it the bits of green for the color and didn't change the flavor at all. I used some parsley too, but not very much of that either. They turned out great!

cilantro is not a normal spice for falafel, so I ommited it, and added parsley instead, which is normal for middle eastern cuisine. it was yummy, I rolled them up in pizza wraps and onion bread and added tahini with garlic and lemon and olive oil, slices of white onion, and big chunks of red tomato and lite ice berg lettuce, also cucumber slices were great in there. wrapped it all up, drizzled the tahini dressing on it and mmmmmmmmmmmmmmmmmm
