View Full Version : How long can you store coconut meat?

We live in the hot Sonora Desert and have been using a lot of coconut water to help balance the loss of electrolytes and minerals. My question is: How long with the coconut meat store in the fridge? Can you freeze it and still have it "creamy" when thawed for puddings, etc.? What signs does it have when it turns? (ie smells, mold?)

I have stored mine up to 3 days in a ziploc bag. I would not suggest freezing. From the moment it exposed to air it starts losing it's nutrients and is best eaten or used right away. I make coconut meat, mango, banana, and pineapple smoothies. They are my favorite and a great refreshing way to use the meat right away!
You could always use the meat in many dehydrator recipes. I have crepes just out of my dehydrator sitting here and I am making a crepe creme that goes on top also made with coconut meat. The crepes themselves use 3 cups of meat so recipes like these would be ideal for you to try.

Hey, MBF, I make those same smoothies for DH every morning!!

Today I ran out of mango so used papaya. I also throw in a carrot for the really pretty peachy color, he gets a kick out of that.

When he does his own, he also adds 3-4 organic black mission figs - he likes it SWEET!

Aren't coconuts the greatest?
