Can you Dehydrate food in a convection oven?

Before I invest in a dehydrator, does anyone know if it is possible to dehydrate in an convection oven. My convection oven only goes as low as 140 degrees though.

My convection oven has a dehydrator setting also, but it is too hot at 140 degrees, so I use a bread rising setting which is 100 degrees. With the air flow and dry climate it works just fine. Hopefully yours as a similar setting.

funny thing though, between the time that I posed this question and now, I've been given a dehydrator. Turns out that my sister-in-law inherited one and wasnt using it. YIPPEE for me!

I'll still check my oven settings though.
