Hi all,
I am trying out Raw Ravioli today. I don't have "braggs" with me right now, wonder if I can sub "braggs" with Nama Shoyu using same measurement? (6 teaspoons) Thanks

I would guess that your best bet is to use the seasoning liquid 'to taste" as the say in cookbooks! Flavor wise they are quite similar to me, but it has been a while. find Braggs to be quite strong, and tamari even stronger, but thats just me.
I am going to try the ravioli recipe this weekend..Must buy turnips! :) Let us know how yours come out. I have the new slicer I bought from Alissa with her book, so I am ready to try this...

I made a modified version of these rawviolis, REALLY REALLY good.
I added chopped marinated mushrooms to the mixture as well
I sandwiched the mixture between the turnip slices and dehydrated them for about 30 min. to soften them up.
I then topped them with Spinach pesto.

VeggieMom! That sounds really great. I too was thinking mushrooms...I made the portabella mushroom "moc" sausage recipe in Alissas book, and I was thinking that it would be be great in the rawvioli. Brushed with olive oil and garlic, and served with both marinara and pesto...
If only I didn't have a day job! But then I couldn't afford the organic turnips..

How did you like Alissa's sausage recipe? I have yet to try it, but if you think it'd be good as ravioli stuffing, I'm wondering if it'd make a yummy pizza topping. Sausage pizza! Admittedly, for whatever reason, real pizza is the food I miss the most (though I don't really crave it). Weird.

Hi all,
I did raw ravioli yesterday and it was so good! I follow Alissa's recipie except that I put folded turnip with it's "cheese" filling in dehydrator for 30 mins as veggiemom suggested. It helps soak/soften the turnips. My wife and my friend love it. My wife and I gone totally raw but my two girls age 12 and 11 keep saying "yuck" :( However kids like some salads and hopefully I can get them into more raw food diet over time.

Andrew, the "sausage" is kind of like a mushroom pate. I loved it raw, as well as partially dehydrated. It doesn' t have "meat" texture, and my hubby said, it was more like an imitation kind of like soy meat. He too liked it better soft as a pate.
I suppose you could put it on the pizza, but it won't have the chewiness of meat if that is what you are after. Kinda, but not really. I guess it is all about recreating the old familiarity if that is what you want. I used it as a topper for crackers, and DH thought that was better.
It tastes very earthy and sage-y. Yummy.
Let us know if you try it, I would be curious.
