i'd like to try to make breadsticks -- the cruchy sesame-covered ones like you used to get in all the restaurants wrapped in cellophane. any ideas on a raw bread dough that would end up very crisp? TIA

I give them to my grandson and he loves them. He would not eat a fruit or veg if I begged or paid him so maybe they are not the best for raw eaters. Why not try celery or carrot sticks instead

buckwheat and flax get crisp, you could try on of the cracker recipes and make them in bread stick shape and roll in sesame seeds.

thanks for the suggestion. :) do you know a cracker recipe that uses buckwheat AND flax?
