Raw Priestess' graham cracker with raspberries and agave on top... mmmm
I was craving raspberry jam after reading about those thumb print cookies, and this satisfied my craving.

4 cups frozen corn (take fresh corn and cut off the cob, then freeze, it changes the texture)
3/4 cup flax meal (flax seed, ground, unsoaked)
1 tsp fresh ginger (grated)
1/2 cup coconut oil
3 T agave' nectar
1 T mesquite' pod meal
1/2 cup lemon juice
1/8 tsp Celtic Sea Salt
dash cayenne
put into food processor, and blend until smooth
spread onto teflex sheets (makes two), and score with the back of a knife to make the shapes and sizes you want.
From Janice: These are good :) I am going to try some molasses next time (I know not raw but I have some really good natural Blackstrap, lots of iron).

Okay, I was with you on all the ingredients with the exception of mesquite pod meal. What is that?? And where do you get it?
The finished recipe sounds yummy! But I see the mpm is 1T -- a fairly good amount, so I probably wouldn't want to leave it out? :)

Mesquite meal is ground up seed pods from the mesquite tree, which primarily grows in the southwest US (it's practically a weed in south/central Texas). I've never had it, but it sounds like it has a chocolaty/cinnamon taste, so you might be able to sub cocoa/carob and cinnamon. You can definitely buy it online (just google "mesquite meal"), but I don't know where you'd find it locally.
