An article recently caught my attention regarding the use of heat (by steam or boiling) to remove the shell of most whole nuts, commercially. Hand shelled nuts definitely taste better-- do you think nuts that have already had their shells removed and have sat on the shelf for awhile are still viable?? And does anybody know of a good source (both fresh and reasonably priced) to buy whole, unshelled nuts from?
