Ok, I picked one of these up from the local farmer's market and looked it up on the internet, apparently these are aka "bottle gourds". I am trying to find out if I can it them raw somehow....
Anyone know!! ;)

well no response so I ate some. I peeled the skin off and scooped the seeds out and cut up the rest. They taste like cucumbers but the consistency of eggplant. I am dipping them in an Almond/parsley patte with some carrots and celery...yummy
