View Full Version : Coconut Shake! Mouthwatering yummy!!!

Hi All,

This recipe came from Michelle (www.fromsadtoraw.com). Mexican Vanilla Frozen Yogurt. But I make mine as a shake in the morning.

All of almond milk (I make mine: 1 1/2 c. water, 1/2 c. almonds, 1/2 tsp. honey)
All of juice from young Thai coconut
All of meat from young Thai coconut
2 medjool dates (I use 6 honey dates)
1/4 c. honey or to your liking
2 tsp. vanilla extract or to your liking
Sprinkle with alot of Cinnamon to taste
Ice cubes ( I use 9)

Blend till nice and creamy!

Enjoy!

Pansy, I just made the Mexican Vanilla Frozen Yogurt for breakfast this morning. All I can say is, YUM! Thanks for sharing!! :)

I am so glad you tried it. My husband and I have this for breakfast every morning and when we don't, boy we sure miss it!

We made this last night as a dessert we added a couple of frozen bananas and more ice, made ice-cream it was a rave. thanx for sharing this treat.

Wow, that sure sounds good, will have to try it.

I do love young coconuts.

We have an asian market about an hour away, on the way to the co-op, so will have to pick up some more.

They also have fresh durian. I know that everyone says you can't get fresh durian anywhere but this one place in California, who has them flown in and they cost an absolute fortune, but this little asian market in Lacey Washington gets them flown in too, and they are much much less expensive.

Not $13.00 a pound, they cost about $10 for an entire durian. sometimes less.

Anyway, I don't care for durian, so it's no biggy to me, but for those who love it, it's nice to have fresh.
