So I made the Crepes, lathered them with the strawberry (added some raspberries, too) sauce - and now there's no one around to share this! It came out delish - but after a reuben sandwich and one portion of this, I am stuffed (a couple of weeks ago I would have finished a HUGE SAD meal, and had room for a big dessert, too!!).
My question - how will this keep for a day or so? Will it mush up too much?
(of course, time will tell...)

I notice this with many of Alissa's recipes. They're really made for an entire family. One recipe will often feed me for days.
The crepes do get a bit mushy if you keep them, but they still taste yummers! lol
Could you scrape off the filling and redehydrate the crepes?

I'd say about 2-3 days they should keep. Yeah, they might get kinda mushy due to the sauce being on top but there two things you can do..
1. Dehydrate them for a yummy, yet slighty "different" kind of treat
2. Freeze them and eat them as a frozen (slightly thawed, though), ice cream type of treat

Ooooohh - those are two really GOOD ideas! I was thinking of blending it all up, and then dehydrating them - but I like the idea of doing them whole, better. Freezing is a good idea too.
Rowanc - I'm way too lazy to scrap the filling off. But it is good to know they still taste yummy even if they are mushy.
Thank you both.

I love the crepes. Between myself and my husband, mine usually don't last that long to have to worry about keeping them for a few days
Next time you make them, you could pour less fruit sauce on top so they don't get soggy so quickly.
Last time I made them, I used strawberry and blueberry sauce. Yum!

Yeah, I think freezing them sounds like a much better idea.
Duhhh... I think I'm dull today.
