View Full Version : Sweet Potato Pie recipe (but crust needs help)

I made a Sweet Potato Pie, but used buckwheat for the crust instead of nuts and stevia instead of dates (trying to keep starches and nuts separate a la Raw Detox Diet). The filling is tasty, but the crust needs some work. Any suggestions would be appreciated:

Crust:

2 cups buckwheat (soaked or sprouted)
1 T stevia leaf


Filling
2 large sweet potatoes, grated and soaked for 4 hours in 1 T stevia, 1/2 lemon juiced (rind and all), and water to cover.
2 avocadoes
1 t cinnamon
1 t nutmeg
1 t stevia leaf


Drain and rinse the buckwheat, let dry @ 1 hour. Blend with stevia leaf in the food processor until pasty. Press into a rectangular cake plate.

Drain grated sweet potato. Homogenize through juicer (or puree in blender), then put in food processor with the rest of the ingredients and blend. Pour into crust and chill for 30 minutes.

Has anyone made any grain-based crusts that turned out a good texture? This one is okay, but not great.
