Hello

I have some guests coming on Wednesday and I told them I would make a banana cream pie for them. I just made one that had avocadoes in it and it did not hold up well. I am looking for something that really mimicks the SAD version as far as texture goes. Also the green tint was a bit of a turnoff, although it did taste good.
Does anyone have a great banana cream pie recipe? I have Alissa's book but have not tried her recipe yet. Anyone have any experience with it? How about adding phsyllium (bad spelling! ) husk to it?
Thanks!

Hi,

Alissa's banana cream pie is excellent but I found that I had to add some coconut oil to the filling to firm it up so you could cut slices. I don't think you'd find a better recipe although I'm still fairly new to raw and don't know much yet!!

Not sure how 'stiff' you want it but I make one like this:

crust
walnuts and dates with little bit of coconut if you like. I use about 1 1/2 cups walnuts and 3/4 cup dates but just keep addind dates till get consistency you like. Press crust into a pie dish and then add a layer of sliced banana over the crust

filling
1/2 - 1 cup cashews
3-4 bananas
1/2 cup dates (or more if you like)
1tsp vanilla

Process nuts till fine and then add all other ingredients. You can add 1/2 tsp cinnamon if you like. If you want it to set more you could add coconut butter - I don't as it gives me headaches. You could also add an avocado instead of cashews and then add carob / cacoa and make it a choc banana creme pie so the green tinge disappears.

good luck

Key Lime Pie recipe

Crust
2 cups almonds, soaked overnight (recipe calls for pecans and to dehydrate after soaking. I thought the almonds were great).
1/2 cup raisins, soaked for 20 minutes (recipe calls for dates - raisins were great).

Filling

1/2 cup coconut water
Pulp of 1 coconut (I used a mature coconut, lots of meat, tasted good, but a lot of work. Recipe called for a young coconut).
1 cup macadamia nuts, soaked overnight (recipe calls for 1 avocado, but I didn't want to mix the starch with the nuts, so I substituted).
1/3 cup lime juice
Grated peel of half an organic lime (I put 1 lime through the homogenizer...a little too much bitter taste - stick with half).
1/2 teaspoon vanilla bean (recipe calls for 1 teaspoon vanilla extract. I like the vanilla bean and it is more natural.)
12 dates, soaked for 20 minutes (recipe calls for 1/2 cup, which would be about 16 dates. I recommend going with the 16 dates. I had just found that a recipe I made the other night was way too sweet, so cut back - not a good choice here).
2 Tablespoons flaxseeds

Combine almonds and raisins (with soak water) in a food processor and blend. Press into a rectangular cake pan.

Combine all filling ingredients in food processor and blend. Pour into crust. Chill for a few hours before serving.

I think this recipe that I posted for key lime pie would be great, just add the additional dates and substitute homogenized bananas for the lime. Very stiff. I used a mature coconut. I think it would be perfect!

Thank you all for your recipe ideas!

I have tried using regular coconuts in recipes before and they have come out awful. Very chunky and stringy and clumpy. So now I tend to shy away from those. I would love to be able to get my hands on a young coconut but have not been able to yet. Sigh!

The recipes look great! Again thank you everyone for posting your ideas. They all sound wonderful! You guys are great!

young coconut meat could be used in place of avocadoes....to have a white filling. If it is not thick enough, add a little psyllium powder and chill it (get the consistency right first) and then fill the shell.

I put it in the processor and ground it with a little water and it came out very fine. Maybe that might help.
