I really loved the corn chips I made, but it's sort of a pain to always shuck tons of corn. I also want to try some soft tortillas. I was wondering if it's possible to buy them organic and non-blanched... anyone know?

Shan,

I thought I read to only use frozen corn as fresh makes it taste awful. How is it working with fresh corn and what recipes are you using? I would love to make some but didn't because of the blanching.

Shivananda and anyone else.

Your thoughts, please.....

If a recipe calls for frozen corn, and any corn frozen without blancing has the enzyme that makes it taste bad, then would one be better off shucking it and eating it raw and unfrozen, or freezing it and risking the bad taste? Thanks.
