I made some tasty Sunflower Carob Balls last night and wanted to share. I got the recipe from Rawsome:

2 cups sunflower seeds, sprouted - 1/2 for balls, 1/2 to roll them in
1/2 cup carob powder
1/2 cup almond butter or tahini (I used tahini)
1/2 cup dates (15 Halawi dates pitted and squished), soaked for 20 minutes, then pureed
1 teaspoon vanilla bean

The recipe also calls for 1/2 teaspoon cinnamon and 1/2 cup raisins, but I forgot those and it turned out fine.

Combine all ingredients (except 1/2 of the sunflower seeds) in the food processor and blend to paste. Take 1 T of paste and roll in remainder seeds, place in casserole dish, and refrigerate. Makes about 40 balls.

Rawsome recommends freezing, but I don't like to freeze enzymes. I would also recommend making sure the sunflower seeds are not wet when you use them.

veganman, thanks VERY much for posting this recipe. So many recipes are based on nuts, which I can't send my daughter with to school, so I've been feeling very frustrated. I've been wanting to find some recipes that use seeds instead of nuts, so I'm definitely going to try this, thanks!! :)

I just made them... yummy :) I added a touch of salt and a little agave nectar. Very good!

I made these tonight, and they turned out great! I used medjool dates instead of the others specified, and I used about a 1/4 cup raisins. I think next time I will add a pinch of salt as well.
I liked these because they weren't overly sweet.

Thanks again for sharing the recipe!
