View Full Version : Raw Walnuts ?

Hello.
I'm still doing research, so please excuse my ignorance.
While shopping at TJ's, I found walnuts marked Raw. Does this mean that I don't have to soak them, or do I still need to do this?

Hi Spider,
The soaking isn't predicated upon the nuts being roasted or non-raw, but rather to aid in digestion. Many people notice that when eating raw nuts right out of the bag, they get indigestion but when they are soaked first, it's not a problem.
Soaking also removes the natural enzyme-inhibitors (from what I've read). So, you don't HAVE to soak them, but it may prove more beneficial if you do unless you use them in a recipe that specifically says unsoaked nuts.

After a month of playing, I'm still having fun determining the various textures I get out of nuts depending on how long I soak them. I soaked some walnuts for almost 26 hours and put it in the coffee grinder. I got something very close to pudding.
Almonds don't change much with more soaking. I still get the same texture.
Cashews also change quite a bit.
