Hi Joz!
Thank you for the compliment on my cheesecake photo! Before I share the recipe, I must let you know that this recipe is a closely guarded filipino recipe. It's quite sacred to our family! (LOL! Just teasin'!!)
The recipe for the cheesecake itself is from a recipe posted on this board. The recipe is called "Chocolate Carvel Cheesecake" (what a name, eh!) I just did not make the chocolate topping. As far as the whipped topping, I used the whipped topping recipe from RawGuru's cheesecake recipe. Since I wanted this to be more of a strawberry cheesecake, I served each slice drizzled with a strawberry sauce made of blended strawberries and agave nectar (or honey). Sooooo goood!!!
To make it easy for you, I've provided the recipes below: :)
CHOCOLATE CARVEL CHEESECAKE (posted by Sheryl)
Crust:
2 cups pecans
1/2 cup raisins
1) Process the crust ingredients until they are crumbled and will hold together when squeezed. Leave some texture in - it adds visual appeal and tastes nicer too.
2) Press into the bottom of a spring form pan
Filling:
3 cups raw cashews, soaked a few hours to soften
3/4 cup lemon juice
1/2 - 3/4 cup dark agave nectar
1/2 cup melted cacao butter
1/4 cup coconut oil
1 vanilla bean
1/2 teaspoon sea salt
1) Grind the vanilla bean
2) Blend all ingredients together until very smooth
3) Pour into spring form pan
Topping:
(The photo you saw did not have this chocolate topping. But I have made this topping before and it is awesome!)
1/4 cup cacao butter
1/2 cup cacao powder
2 teaspoons agave nectar (or more to taste)
1) Melt cacao butter in the dehydrator or in a bowl of just warmer than body temperature water
2) Mix ingedients together
3) Drizzle over cake (I like a solid chocolate top best)
Place cake in fridge or freezer to set.
Slice while still firm (to avoid cracking the chocolate topping)
WHIPPED CREAM by RawGuru
1 cup young coconut meat (chopped up)
3 tbs. raw cashews or mac nuts (soaked for 8-10 hrs)
8 soaked dates or 2 tbs. honey (or more if you like it sweeter)
3 tbs. coconut water or almond milk
1/2 tsp. lemon zest
drop of vanilla extract
Blend all the ingredients for the whipped cream and chill in the freezer until ready to use. When ready to decorate, I placed the whipped cream in a ziplock plastic bag, cut one of the corners and piped it along the sides of the cheesecake.

Hello Joz!
The "balls" is actually the whipped topping, just piped through the corner of a plastic ziplock baggie (like a pastry piping bag) :) Thank you for the kind words about the photo! Per your request...here's the picture.
