I just got two of the world's biggest daikon radishes and need to eat them before they go bad. I know I can shred them and use them as a nice compliment in salads, but does anyone have some other good ideas for what to do with them?

Really? I thought they might be a little strong-tasting for ravioli or spaghetti. They do have that spicy, wasabi-ish taste.

Any radish is welcome at my house. I love making Alissa's Indian Spinach dip(I add some finely processed nuts--usually cashews--for creaminess). Spread on the radish slices--wonderful. Use as a chip replacement in the raw form, so any pate spread or piped on top is awsome. Shredded in a salad is, as you stated, an option. Shredded and used as a rolled raw sushi ingredient sounds pretty good, too.
Let us know what you come up with and try. Enjoy.

All I can think of is imitating Mrs. Claus from the Rudolph the Red Nosed Reindeer animation. "Eat, papa! Eat. Eat!"
I should go to bed now.
