I was wondering if one of you rawsome chef could help me make a pie with the limited ingredients and equipment that I have. I live in a small, small place in a small, small country where fancy ingredients are hard to come by.

But, I do have all the fresh fruit a girl could ask for.

BUT I WANT TO MAKE A PIE. It's the pie crust I don't know if I can do.

Help. Here is what I have:

4 dates (they cost an arm and a leg)
Cashews
Honey
Rasins

For the filling
I have all the fruit I could ask for. Banans, Mangos, papaya, EVERYTHING!
Vanilla
Honey

I have a blender for equipment.

Pit and soak your dates

Blend cashews small amounts at a time until a fine dust is made

Mix dates and cashew flour to a texture that is modable (

Press into a pie plate

Blend fruit of choice, use raisins tosweeten tart mixtures if necessary

Do NOT use honey in crust, save it to lightly drizzle over whole fruit that garishes the pie.

Chill and eat!!!

okay, here you go take your dates, pit do not soak and cut into smaller pieces for ease of blending.

take 1 cup of cashews and the 4 dates and about 3 T of raisins and place into a food processor, if you don't have one, then chop and chop and chop as finely as you can, don't use a blender for this, it doesn't work well,

chop up as finely as you can, then press into a pie plate, this will be your crust

Okay for a cream pie
1 cup cashews (soaked)
1/2 cup honey
3 cups fruit

blend in fruit and honey in blender, then add cashews and continue blending until smooth,

you can make a creamy topping if you like

1 cup cashews (soaked)
1/4 cup honey
1 T lemon juice or orange juice is nice
add a tsp of vanilla if you have it,

blend then pour on top of the pie.

hope you like it.

What fruit do you suggest???

I have tons of mangoes and bananas right now.

I'm thinking the mangoes. With a creamy topping. I think I'll do something with coconut milk for the topping!!!

I'll post pictures when its finished!!! :cool:

sounds good, just mix stuff together until it tastes good, then pour it in the pie shell.

I live in China and sometimes it's hard to get special ingredients here, too.

I would use the date nut torte recipe by Alissa as a base:


Date Nut Torte

Base of Tort:
2 cups raisins
2 cups walnuts

Frosting:
1 cup dates, pitted and soaked
1/2 lemon, juiced

Maybe substitute the walnuts using your cashews, and blend the bananas with soaked and pitted dates or fresh young coconut and then refrigerate or freeze (I don't know whether the filling won't rather liquid).

I just made the pie. :cool:

The crust was:
4 dates, pitted and chopped, chopped, chopped.
a handful of raisins, chopped, chopped, chopped
3/4 c. Cashews I used a thai mortal to crush

Mixed and formed into a pie crust. I didn't have a pie pan so I used a bowl.

The filling:
Flesh of 3 ripe mangos (wished I would have stopped there! It was yummy goodness)
But, I added 3/4 c. cashews
A pinch of honey
A drop of coconut milk.

I topped it with banana slices and mango chunks. It is currently in the freezing awaiting to be eaten! I will post pictures once it is cooled! :cool:

hey moonstone,

that sounds really yummy!

Can't wait for the pic *drool* I am also planning on doing a pie next week when starting the raw food challenge. Date Nut Torte it will be, the easiest one to start with.

Was your filling very liquid or okay? Did you grind the cashews for the filling or just put them in whole?

Congrats on your pie! Sounds delicious! :)

I am curious about your dates ... you said 4 were really expensive. Were they fresh dates? Where I live, dried dates are one of the cheapest things I can buy. I only remember seeing fresh medjool dates once at my grocery store, but I can't remember the price.

Regarding my dates....

Well, I live in Thailand and they were imported, so yes they were expensive. I am on a different budget than most westerners. The dates costs 100 baht which equals $2.50. I know you are thinking, that's not expensive. But $2.50 lasts me 2 whole days so four dates seems expensive.

Anyways, dried... um... well, this is my first "dates" purchase (and actually the first time I've ever eaten them as well) so I'm not sure I know. They were very sticky, which leads me to believe they are NOT dried. But then again, maybe dried dates are sticky.

Maybe you could tell me better! I tried to find out about dates. I'm thinking surly Thailand has to produce them. They come from the date palm, right??? But I can't find anything about it. HELP! :confused: :cool:

Moonstone, there are many different kind of dates,

in the US, fresh dates for for anywhere from $4.00 to $9.00 per pound, and dried are about $3.50 per pound, or at least in my neck of the woods.

so, yes, $2.50 for 4 dates does seem awfully high.

I love medjool dates and eat them almost every day in either a nut milk shake or brownies, or some kind of cookie or ice cream thingy, I realy love my raw treat when I am finished working, usually at about 2to 4 am, LOL work work work, way too much work for me,

that's what happens when you are self employed. and spend all day on the computer writing YIKES!!!
