Do the grains have to sprout or can they just be soft enough that they split? Or better yet, can I just BUY chickpea/almond/ or whatever else flour for the bread?

Alissa stressed that it's really important to sprout them because it makes all the nutrients more bioavailable to the body. Also, I have read that it changes the gluten (protein) so that people who are gluten sensitive can eat it.

I have used raw buckwheat that's just been soaked overnight, and not sprouted, for cereal though. I've also dehydrated soaked raw buckwheat and then ground that to make a flour. That's pretty amazing in dehydrated recipes-makes it like bread.

I think optimally you should soak and dehydate the almonds - took me about 48 hours....24 to soak and 24 to dry and then used my coffee grinder to make the flour in 5 seconds :) Alot cheaper than buying Bob's red Mill brand!

I would think the same for chickpeas....would love to hear experience on this....?
