...a FOOD DEHYDRATOR!!!! Yesterday my hubby took me out and I got an American Harvest. Right now I have sliced potatoes soaking in salt/a.c. vinegar water. In an hour I'll get to test out dehydrator. The only thing that sucks about eating raw is that if you get a craving for something that needs to be dehydrated you can't eat it for like a day or so! :eek:

Anyone have a guess as to how long the chips will take to sort of get crispy?

What we do is make a bunch of stuff in the dehydrator, then freeze it, then when we're hungry, we put it in the dehydrator to warm/thaw, and it's done, we do this with onion bread, any kind of burger patty, pesto stuffed mushrooms, raviolies, etc. just have fun, you're gonna' love makin stuff!

Oh my goodness RP- no wonder you have a few dehyrators running at once :) That's amazing.

Could you freeze potato chips? I'm already worried because they've been dehydrating for about 7.5 hours and are getting smaller and blackish and just seem bendy, not crispy.

are these regular white potatoes? Or sweet potatoes? Maybe next time ad some lemon juice to the soak mix

Yeah...that can be a real bummer...but one thing you could do is on days you DON'T have a craving for the chips, crackers, etc. make them then so that way when you DO get the craving, they're there waiting for you! :) Like pick one day out of the week when you can/will just make a bunch of stuff like that...that you normally like to snack on and store them away for those "crucial times".

I used all 9 trays in my dehydrator.....and was so excited about my sea salt and vinegar potato chips!!! I used te spirooli to make sure they were thin enough....soaked for 4-5 hours. and 36 hours later....I threw them out- they never got crisp they had a strange starchy pasty taste- yuck! mine turned kind of purpleish I have never tried that again!!! :(

Yeah mine turned purpleish too :( They were regular white potatoes. I heard sweet potatoes were great ... maybe I'll try again with them. The taste was ok, not even that startchy but they turned out hard as rocks. Maybe I should have just cut them thinner....hmmph! Well hopefully I'll get better at this with practice.

One thing that will keep them from turning that greyish-purplish color is to soak them in apple cider vinegar (or maybe lemon juice would work well too)...now thing is, if you DON'T want them to have the vinegary flavor, after soaking for about an hour or so, RINSE them well and then marinate in your oil, spices, etc.

I did that and the color and flavor was great, but the texture still wasn't quite what I wanted so I've kinda given up on making chips with white potatoes...but you might like them so don't let MY experience deter you from trying again! :)
