I dusted off my spiral slicer last night to make "pasta" marinara. However, the zucchini came out REALLY watery and, when I put the sauce on top, it turned into a big goopy, unappetizing mess! :eek: (Allissa's sauce, by the way is WONDERFUL-- I ended up spreading it on some Manna Bread for a late nite snack). I don't know what I could have done differently--- does anyone have any tips??

Hi Sharon,

It may have just been the zucchini. I'd try another one. Try to find one that is real firm.

At our last Raw Potluck, I made raw spahetti. I didn't make the marinara sauce, but I did make the Pesto sauce to go on top. I made the noodles out of zucchini & squash and they both looked good.

A trick I posted in my journal, is something that I read from Shazzie: You make the pasta, then let it drain & dry on towels. I did that last night. It came out great. THis way you can use the smaller squash if the larger drier ones are not available in your area. I buy the organic ones locally, and they are always tiny and wet.

Thanks, Helen and Cassy for the info... I think I'll try again and do the paper towel thing; I also thought that I might have better luck with a yellow squash, as they don't seem to be so watery!

Sharon, I've had the same problem when I make my zucchini pasta.

Cassy, I thought about using paper towels to dry up some of the moisture, but didn't do it for some reason. I'll do that next time.

Yep! I had heard about the wateriness of the "pasta" before trying it so I already had my gameplan set to drain on paper towel. I also tossed it in a little olive oil and layed on the dehydrator while I made the sauce in order to have the "noodles" soften a bit. Took them out and added the sauce plus some chopped onions, bell peppers and mushrooms...woulda swore I was eating cooked spaghetti! :) I think, though, I'm gonna get a Spirooli because I heard the "noodles" come out bigger like spaghetti as opposed to fine like angelhair pasta.

Cherie, I was thinking of putting the noodles in the dehydrator too! I thought what a great way to make crispy topping for a bowl of soup. I bet if I did as you, by using spices and a marinade, then dehydrating them, it would be tasty! I think if I did this, it would have to be angel hair, so they aren't too chewy or something.
