We all know that our bodies are about 70% water. We know that water is essential to our health. But only recent scientific discoveries have been giving a hint to why it is so.

In my cooked years, I used to carry a bottle of water with me always. I used to drink water often and a lot. Yet, only after I went raw, and started eating loads and loads of juicy fruit, I discovered how dehydrated I was for years and years. Suddenly, my rough heels softened, and my general health improved. I now begin to realize that going raw has had such a dramatic effect on my health largely due to the fact that my body finally started getting enough water. Surprisingly, I now hardly ever sip water. Most of my water intake comes from fruit!

Only recently scientists began to realize how important water is to our life, and this not some metaphor at all. It has been discovered that proteins trap water molecules inside them. Thanks to certain weak links between the hydrogen atoms, proteins are then able to change their shape. Different shapes of protein correspond to different functions that protein can perform. So, without water, protein could not work at all, which would have disastrous consequences as far as building new cells, fighting infections and many other vital functions in our body. An amazing discovery has been that protein communicates with DNA with the help of water molecules, which can communicate to protein such sophisticated information like the amount of damage to various sections of DNA. This in turn helps in ensuring that only good sections of DNA are used in the production. Without water, we would have been just a handful of dust. Water is what gives us life, in the exact sense of this word.

I cannot help but think about consequences of not having enough water in our bodies. Proteins not functioning properly, DNA not being able to communicate information to protein, sick/disfigured cells forming, a total disaster! I think that the origin of many diseases could be explained on a molecular level by simply lack of water. And, I cannot help but think that eating plenty of juicy fruit is the best way of ensuring of having enough.

I've been wondering why would my body be better hydrated now, when I hardly ever have bottled water, compared to before, when I used to drink a lot of it. My guess is that it is the quality that matters. It would be interesting to know how this could be explained on a molecular level. Perhaps one day. For now, I play it safe, and have lots of juicy fruit. Every day.

Gosia,

Yes it is vital. I always drunk tons of water and was always thirsty. I don't know how many times people have told me that they thought I may be diabetic because I was always so thirsty. But now that I am raw my thirst has decreased dramtically.

I concure, when I was eating SAD, I drank three pots of coffee a day, 12 cups each, plus 3 grande' breves' each day, about 45 ounces of cream with a little espresso thrown in, and I drank lots of water too, I was taking in about 100 ounces of liquids a day, now I drink about 2 glasses of water, but I can easily eat 2 oranges in a sitting, then wait a couple of hours and eat 2 more, then have some fruit juce, then some soup, then some pineapple, then some more juice.

I know I look and feel better now, it is amazing to me how satisfied I feel with eating fruits and drinking fruit juice.

I used to always be so very thirsty, even after I drank a ton of water.

Now, I'm satisfied, and I sleep through the night too, I don't get up till the am and go to the bathroom, I used to be up about 5 times a night, YIKES, glad that's over.

Yes yes, I'm such a huge advocate of drinking tons of water. I do find that I need less now that I'm raw unless I have alot of dehydrated foods, then I need a little more. It really is amazing how many people don't get enough water but I'm proud to say that even in my cooked SAD days I was taught by my mother to drink 10 8 ounce glasses a day and I've always done it from a young age so I've never really experienced dehydration.

Yesterday I received this daily raw inspiriation from Jinjee:


I went for a walk with Adagio yesterday and found a little wooden bridge across a lovely stream. Adagio gathered rocks and sat on the edge of the bridge throwing them in to the water to hear the sounds they made. I think he would have loved to do that all day. (he just turned two years old on May 1st). I lay down on the bridge and looked down at the clear water rushing over the rocks. And it felt so good just to watch.

And that got me thinking about how our own bodies have so much water in them. Our bodies are 70% water. And then I thought what if we have it all backwards. What if instead of eating so much and drinking so little we really need about 70% of our diet to be water and only 30% food. We can live for weeks without food, but only a few days without water!

I mentioned all this to Storm on our walk this morning and he said “Mandarin juice!” which is what we had just had for breakfast. Storm reels this extremist into perspective! Of course! Fruits and vegetables are about 70% - 90% water. The perfect foods!

I am on Jinjee's mailing list too. I've been on few of those before, but pulled out of them, because found them the waste of my time. This has not been the case with Jinjee (so far ;)) . For example, her most recent email about water reminded me about this amazing article about quantum properties of water that I read in New Scientist (my favourite magazine) recently.

I remember when I first read about raw foodists not drinking water but eating lost of juicy fruit instead. I thought that was crazy. Well, I thought raw foodism was crazy when I first heard about it too. Anyway, after three years on raw, I decided that I absolutely love fruit. Eating lots of juicy ones comes naturally. And, I observed that I do not feel the need to drink extra water. And, I observed that I feel less dehydrated when I have lots of juicy fruit than when I drink lots of water!
