What is your favorite thing to do with parsnip. I picked some up today and was wondering what to do with it. lol. I have heard of making rice and tried searching for it, but I can't find anything I can make. Anyone have any suggestions please? thanks!

Here is a recipe from Alex the Raw Guru at www.rawguru.com:

Parsnip rice (yields one cup of rice)

3/4 cup parsnips processed in a food processor til rice-like with 2 tbs. pine nuts (season to taste with sea salt, etc.)

I also read here somewhere that some prefer using parsnips for the mashed "potato" recipes as opposed to cauliflower. So you could get Alissa's book out and make her mashed potatoes only using parsnips instead of cauliflower.

You could probably also make the pasta and sauce with parsnips instead of zucchini or squash.

cool thanks Rawkinlocs! The rice sounds really easy and I have pine nuts too :)
I'm not sure what I'll try yet...I'll have to look at the mashed potatoes recipe in alissa's book.

If you have some sort of a spiralizer, they make really good raw "pasta".

Brianna, do you like using parsnips for pasta better than zucchini? I am looking for something different as zucchini is kinda starting to turn me off. I had seen that you can use parsnips for the "pasta" and suggested it too, but haven't tried it myself yet.

I have a huge parsnip in the fridge right now that I was gonna make "mashed potatoes" with per recommendation from someone here, but maybe I'll do pasta instead!

Oh...Lunar Fey, you're welcome! :) The parsnip rice is pretty good actually. I think when I made it (it's been a while) I also tossed in a little olive oil, sea salt, garlic and warmed it in the dehydrator for a bit. I won't say it's exactly like rice/rice...but it's pretty good in and of itself!

I bought some parsnips as well this week! I ended up just chopping them up like carrots and putting them in my salad...they're really yummy!

The thing I like about the parsnips for pasta as opposed to zucchini is that the zucchini makes so much juice that you end up with a plateful of water.

Brianna, thanks for the reply about the parsnip "pasta"...yeah, zucchini can get watery on ya...I sometimes combat that by tossing in olive oil and drying in the dehydrator for half hour to an hour or so and that really helps it out a lot. But I just want a different taste I guess. Next time I'm in the mood for pasta and sauce, I'm gonna try the parsnips. I did daikon radish once on recommendation of Victoria Boutenko on her video...but didn't really care for it much. I do like making pasta out of yams though...just gotta rinse some of the starch off after spiralizing it.

I cut it in sticks and ate it like I would a carrot. The lady at the health food store told me to try it this way. It was good, but there are too many carbs in parsnips for my diabetic body to handle. :(

Parsnips go very well with apples and they make a fairly sweet combination. I remember once making grated parsnip and apple patties, with chopped mixed nuts, a little onion, miso, lemon juice, sage and ground coriander. I can't remember the quantities but an enthusiastic raw chef could come up with something good. The onion and herbs takes off the sweet edge and adds a kick to the taste. I think this was originally a cooked vegan recipe but should be fine in the dehydrator.
