well..... basically you should be doing pullups (if you can) otherwise do some dumbbells rows, or even grab some canned f00d or water jugs and do some rows with them. the kind of exercises where you pull towards your body. i used be hardcore for the gym and right now i've come to the conclusion, just do whatever you love doing. cause if you cant do it naturally day in and day out you'll get bored and quit. so with that i say just do some yard work, house cleaning, fixing the house, etc... things that keep you moving. all that flab will dissappear with some time.
heres the dumbbell row in case you dunno what it is:

whevenver i did those workouts and also the one where you pull down the bar behind the neck... it worked my upper back/shoulder muscles above the lats and made them too toned for my personal taste. what to do about this?

Everyone's body is genetically different. Those particular exercises may have produced results for you that may not happen with someone else. Apparently, your lats naturally respond to resistence very quickly. Some ladies would love that because they can create the "V-taper" look that many seek after. But everyone's body is different (as is everyone's taste in what they want to look like of course).
Peace.
