I made up my own recipe for a raspberry banana ice cream torte. Here it iis:
Ingredients:
2 cups soaked almonds
2 cups dates, pitted
8 bananas (5 frozen, 3 fresh)
2 cups frozen or fresh raspberries
1/2 cup raw carob powder
1 T vanilla
1 8-oz jar of raw almond butter
juice of half a lemon
5 tablespoons raw honey or agave nectar
dried shredded coconut
Instructions:
In food processor, grind almonds to fine powder. While still processing, add dates until mixture forms a ball (should take about a cup). Add 1 tsp vanilla. Remove from processor and press into 8x8 square glass dish. Thinly slice banana and layer over crust. In processor, process 3 frozen bananas, 2 tsp. vanilla, lemon juice, almond butter (reserving 3 tablespoons for later), remaining cup of dates, carob, and 3 tablespoons of honey or agave. Once smooth like pudding, layer over sliced bananas. Again, thinly slice fresh bananas and layer over the carob mixture. In food processor, process remaining 2 frozen bananas and any remaining fresh banana with 1 cup raspberries, 2 tablespoons honey or agave, and reserved almond butter. Once smooth, layer over the sliced bananas. Sprinkle coconut over top of torte and line the edge of the dish with remaining raspberries. Place in freezer and let freeze at least a few hours. When ready to serve, remove from freezer and let thaw about 20 minutes before eating. Or what I usually do is cut my piece and put it in the dehydrator for about 5 minutes instead of waiting 20 minutes for it to thaw.

Wow! That sounds great!!
One question -- do you measure the almonds before or after you soak -- since they swell up when they've been soaked. I've found this makes a difference in consistency and texture in recipes.
Thanks! :)

This takes a while and is worth it. I want to credit rawguru.com with the recipe. However, I made some modifications based on the experience. I have noted them within the text of the recipe.
Crust
1 cup brazil nuts (or almonds)
1 cup walnuts
1/2 cup dried figs (or dates)
1/4 cup raisons
2 tbs. of orange juice
pinch of salt
NOTE: I used brazil nuts and figs. It really tasted like a traditional graham cracker crust!
Filling
2 cups raw cashews (soaked for 10 hours)
1 cup almonds or mac nuts (soaked for 2 hrs)
2 tbs. rejuvelac or lemon juice
pinch of salt
1/3 cup coconut water and 3 tbs. chopped meat
1 sun dried vanilla bean or 1 ts. vanilla extract
4 tbs. agave nectar or honey or 7-12 soaked dates
NOTE: I used Mac nuts, and agave but I am used to that as a sweetener. Your palate will dictate.
Whipped Cream
1 cup young coconut meat (chopped up)
3 tbs. raw cashews or mac nuts (soaked for 8-10 hrs)
8 soaked dates or 2 tbs. honey (or more if you like it sweeter)
3 tbs. coconut water or almond milk
1/2 tsp. lemon zest
drop of vanilla extract
NOTE: I think the whipped cream is actually not essential at all. It doesn't come out creamy in a food processor or blender unless it is high speed like a vitamix.
Topping
1 pint really ripe red strawberries (sliced fine and put into a bowl)
3 tbs lemon juice
1/2 tbs agave nectar or honey
pure water (not tap)
How to: Ok, begin with a round cheezcake pan (spring form pan). Process all the ingredients for the crust. Press the mixture into the pan and set aside (chill in the fridge).
Now the filling. In the vitamix or champion juicer blend/process the cashews and almonds or macnuts untill they are creamy. Put this in a bowl and add the rejuvelac and salt. Mix really well. Put in a nut milk bag or cheese cloth or bowl covered with a towel and leave it out in a warm place (room temp) for 10-12 hrs. Combine this "cream cheez" mixture and blend it with the 1/3 cup coconut water and coconut meat, vanilla bean or extract, agave nectar or honey. Put in the freezer untill ready to use.
Blend all the ingredients for the whipped cream and chill in the freezer
Now for the topping. Take the strawberries and strain them, to get the strawberry liquid from the bowl, mix that with the lemon juice and a little agave nectar or honey. Set aside untill ready to use.
Assembly:
Yay, we're almost done. Ok. Take the spring form pan, pour the filling in and tap the pan down to get all the air bubbles. Layer the slices of strawberries on top and pour the lemon mixture over it. Put the whipped cream in a star tipped pipeing bag and pipe it all along the sides of the cake, or all over. Garnish with extra lemon zest, and put in the freezer for 8 hrs.
NOTE: The whipped cream and the strawberries froze quickly and became soggy when kept in the fridge. You can't really eat it frozen so I would just chill in the fridge until ready to eat.
Make a strawbery sauce to go with the cake.
1 cup frozen strawberries
1 tbs. lemon juice
1/2 cup water or orange juice
NOTE: I omitted this sauce as I put a lot of strawberries on the top. I would probably do either or and save myself extra time. Again - up to you.
Blend in a high speed blender, and strain out the seeds. Serve along side the cake. This cake is soo good, it's better to make two. It's a little time consuming but well worth it. Trust me.
NOTE: There are variations that you can do with the raw cheeze filling. You can use lemon for a lemon cheesecake, cacao powder for chocolate, or any othe flavors that you like.

I absolutely love this dessert!! Cherry Cobbler with Vanilla Custard Cream by Vanessa Sherwood!!!
http://greenchefs.tv/vanessa-sherwood/Cherry-Cobbler-Custard/
It was so simple to make & tasted like the real thing. It can be right out of the fridge the next day or warmed in the dehydrator. It is RAWesome!! In fact if you have never tried some of Vanessa's recipes I would definately try the Asian Noodle Salad (i subbed kale for the napa cabbage-it was great, especially the sauce) & the Carrot and Parsnip Fettuccine (another simple yet incredible salad)
