I could think of just adding it to a salad, but was wanting some input as to what would be really good to use it for. I have never used it before and I bought a batch and need to use it.
Also I have a ton of beets and I juiced and juiced them and I am sick of beet juice, now what? Any good uses?

So maybe this will be a partial help...
The last restaurant I worked at had a delicious beet and watercress salad. Now mind you it was roasted beets...but you can use this as a stepping stone?
It was roasted beets topped with watercress, walnuts, a walnut vinaigrette, and a drizzle of olive oil. (well it alternated between hazelnuts and walnuts). It was my favorite salad.
I went to a raw restaurant once and they put the beets thru the spiralizer for a salad. I think it was tossed with pears and maybe walnuts, but I don't remember what kind of dressing that was used.
Okay, that's all I have. ;)

Thanks Matilda,
I will try that sometime. Do you or anyone know of a non-salad use for them and they don't have to be used together. I love salads, but I am picky as to how I eat them and these are two things that are no-no's on my salad, LOL.
One of my favourite ways of using watercress is as a smoothie. I peel and slice a large juicy mango and whizz it with a bunch of watercress. It's yummy.
I also like a salad made from sliced sweet pear and watercress, tossed in a light vinaigrette dressing made from cider vinegar and olive oil.
Beetroots, you can peel and cut into very thin slices, then sandwich the slices with a savoury nut or seed cream to make raw beetroot ravioli.

It is good for juicing. It's good chopped up in salad.

I usually eat watercress in salads. Beets are also great shredded in salads.

Mix it all up and YUMMERS!
One of my favorite salads - I also love Alissa's beet/pear salad which is similar.

Hey,
I found a use for my watercress. I made Nori rolls and dressed them on the sides with watercress and my recipe for patte that I use with my nori's garnished with beets and almonds. It was sooooooo good and I overate.
The other dish is a pizza I fixed last week and a special garlic dressing.
Well I thought my pics were resized but I guess they weren't. If I figure out how to do it right later I will post.

liked the looks of that so much I made it my avator.
Hmm that orange and watercress sounds good.
When I get up the nerve I made try that. A few weeks ago I put sprouts in my fruit smoothie and it was wonderful, but 5 minutes later I threw up and didn't stop for a half hour. I haven't mixed greens with fruit since.
