I am craving spinach dip, but I went to the store and got everything but the avocado. Does anyone have a recipe for spinach dip that doesn't use avocado, or do I have to wait until I go out tomorrow and get one?

BTW, I made Alissa's crab cakes and I don't think I am going to wait until they are fully dehydrated. They are definitely a keeper!! Right along with the Mock Salmon Pate'. I have been eating way too many nuts lately, but I can't seem to get enough of the heavier foods. Maybe I could make a dip from mushrooms or eggplant. Any suggestions???????

If you have any cashews, perhaps sub with those instead. I make the onion dip using cashews instead of macs...I'm thinking you could use cashews and then do the spinach, lemon juice, etc...of course you'd have to add water to help it turn over.

This is our favorite and my preschooler loves it too! :)

spinach
walnuts (and lots of it!)
sea salt
cilantro
basil
cumin
olive oil
little bit of water (not much though)

can't really say about how much of each ingredient because I never really measure I just throw in blender lol I taste and taste until I get my own approval. My daughter says: "HMM so yummy mami", about this dip! I love dipping baby carrots on this!

after blended, make sure to refrigerate a few hours.

If I needed to make something with Avocados and I didn't have any, I might use oil and nuts or oil and coconut meat to sub for the texture of the avocado, just make sure to blend well for the smoothness

I was going to make almost the same walnut recipe that you posted Enith. Mine didn't have the cilantro or basil in it, but the rest of the ingredients were identical! I guess I have been eating raw long enough to come up with recipes on my own. That is so cool.

Well I got so busy during the day and I didn't get to make the dip after all. The next day I happened to go to the store and I picked up a few avocados, so I am all prepared to make it. I think I'll make Alissa's recipe with the avocado and one with the walnuts too. Why not???

Thanks for all of the suggestions. I love this board :D :D :D

RP is on to something! Over the weekend I was at a festival here in Guam and the only dish I could have other than the gorgeous fruit was a nasty looking green dish. I talked with the woman and she said it was made with greens-mostly spinach & a strange variety of broccoli but it was marinated in a sauce of blended coconut meat with milk, hot peppers, & other spices I never heard of.
This is definately the next item I am going to try to replicate.
She says she does not cook it, she just leaves it in the sun for the afternoon, stirring regularly.

Anyway it looked horrible but had an incredible taste- absolutely loved it! I had two plates of it!

When you do replicate it, please post your recipe. Some of my best tasting raw dishes are so ugly i'm almost embarassing to eat them in front of anyone!

Can't wait to see your recipe,
Paula
