i bought some bok choy but now dont know how to use it any ideas???

Hi Mama Mia!
I just ate bok choy yesterday. I tossed it in my salad. Bok choy is really good because it's so cruchy and contains a lot of water. I loved it. I also love jicima in my salads. I just started putting marinated baby bella mushrooms in there and also some beets. I also thought of putting the bok choy in a collard green wrap with a lot of other veggies.

Feature Recipe: Storm recently made this amazingly delicious Bok Choy salad/slaw. Bok Choy, a light green crisp sweet chinese lettuce (actually a cabbage) available in most produce sections is high in Vitamin C and A and calcium. http://www.thegardendiet.com/index.html

Bok Choy Salad

Chop up and put in a bowl:
~ 4 bunches Bok Choy
~ 2 tomatos
~ 2 avocados
~ 1/2 bunch cilantro

Dressing:
~ 4 tablespoons raw tahini
~ 2 tablespoons raw honey
~ 1/8 cup apple cider vinegar
~ 4 tablespoons olive oil
~ herbs and spices (experiment with what you have available)
~ salt to taste with unrefined sea salt


I use it in my Green Smoothies. Every day I try to vary my greens. Joz

I've made that Bok Choy salad listed above, and it's delish! I love the bok choy, and the dressing is perfect! :D
