Being that Summer is almost here I was thinking of light and easy things to eat for summer... besides a green salad..Wondering also about BBQ sauces... I need to get some of those chicken nuggets and patties made of Alissa's... any other suggestions???/

...I'll bet that blending soaked sundried tomatoes with dates might make a nice bbq sauce.

Except watermelon I would say,
papaya+apple+raisin-smoothie! Not that it is very summerish though but still lovely.

Sooo many good things. Summer fruits--all of them.
Tomatoes (especially heirloom packed full of flavor) is my top pick
Watermelon--with seeds--or any other melon from the farmer's market
Pitchers and pitchers of raw lemonade over ice with raspberry puree or frozen peach ice for variety.
My favorite dish to make in the summer is Gazpacho--full of wonderful crunchy veggies. I will have to practice making a raw one with added avo chunks.
Thanks for starting the great thread!

Actually one of my favorite summer dinners is a banana smoothie with crushed ice. Just bananas and sometimes in almond milk.
I like my heavier eating during the afternoon for some reason, so the smoothie hits the spot in the evening. :p

I like to rub fresh sweet corn with coconut oil and sprinkle a little sea salt on. Then roll it in foil and put it in my dehydrator for a few hours on low. The cocobutter and salt absorb into the corn and the corn is warm and has that great sweet/salty taste. It's heaven!
And secondly, I live on homemade salsa with cucumber and carrots for dipping. I use tomatoes, cilantro, onions, sea salt and a squeeze of lime and wow is it good!
Of course all melon and berries too!

Orange Julius-fresh orange juice and cantaloupe sweetened with dates or agave and all blended up. Yum! I've seen this posted on this site, can't remember who to give the credit too, this is one of my summer favorites though.

Melon soup is yummy! Just stick a honeydew or canteloupe in the blender and voila!
Fresh corn on the cob is also delish.

Anything straight from the garden. So far my daughter and I each got a strawberry. Some critter has gotten the rest. They are so much sweeter than the ones I've bought at the store and I like them warmed from the sun. I also pulled up a ton of assorted radishes and have been eating mint. Have some green onions too. Still waiting for the rest of it to mature. Hope I get some tomatoes. They are the best!
