Hi, all! I really love cooked mushrooms, but not raw- there's something about the texture. Does dehydrating really give it the cooked texture? If so, how long for some portabella caps? Thanks! Jen

I throw them in a bowl with a little olive oil, garlic, whatever, put em in and when they look like little they are sauted I take em out--maybe an hour or two if that.

so it's just the marinating that changes the mushrooms?

the marinating will wilt them somewhat but dehydrating will make them taste just like cooked. Alissa's Pesto Stuffed Mushrooms are wonderful.

yep, that's how I do it,
if you dehydrate without the marinate in oil, they will dry, the oil, keeps them from dehydrating, it allows them to become warm and wilty, which makes them taste cooked.
I make marinated mushrooms with onions often, and basically all I do is wilt them after soaking in oil and spices.

Hello
I have a question pertaining to Mushrooms. How is one supposed to clean them, they look so dirty. Also, underneath the mushroom there looks like gills or something. Is one supposed to cut all that brown stuff out? If not how are they cleaned?

You just wash them like you would any other produce... no, you don't cut out the gills from the cap. The whole thing, cap, gills, stem, and all is edible.

I only purchase organic mushrooms and don't usually wash them as they soak up a lot of water. You also shouldn't remove the gills. According to Mushroom Info (http://www.mushroominfo.com/) : "Cleaning Mushrooms: Gently wipe mushrooms with a damp cloth or soft brush to remove occasional peat moss particles. Or, rinse with cold water and pat dry with paper towels."

banana shake you will love the marinated mushies!!! I soak mine on olive oil, bragg (you can do nama shoyu) and cilantro. SO YUMMY! :D
