ok I just got out of the fridge two jars (one of each) because the oil got all whitish and gooey. Should I leave these jars outside in my counter? Will it be ok if I do this? I don't like when the oil harden up, augh! :confused:

it's olive oil, it will get all whitish and gushy, because it is cold, and olive oil gets hard at a higher temp than most other oils, it is perfectly natural.
don't leave these things on the counter, once you have opened the jar, they will go bad.
If you want to use it even with the oil, just scoop out some and let come to room temp, then pour the oil off the tomatoes or mushrooms, or place the entire jar with the lid on in a pan of warm water in your sink, and allow to get room temp, then take out what you need.
I do this all the time with my own sun dried tomaotes.

oh yes I know since I made this myself! hehe!!!
oops I left this in my counter today all day, I hope they are ok to eat. Well, I ate some today. more oops! lol
