Alissa's American Cheese Recipe Question

The recipe calls for 1 orange -- do you peel it first before you put it in the food processor or just process the whole thing like it is?

i haven't made this yet, but looking at the recipe, i'm pretty sure she means for it to be peeled. with all the zest and pith, i'd think it would be bitter and overpowering.
