Hi,

What can you do with cabbage besides boil it to death (which is how I used to eat it)?

I have a big ole cabbage sitting in my refridgerator. I'm not a huge fan of raw cabbage bc of the strong taste but there must be something I can do (shred, marinade) to make it more palatable. Any ideas?

2 things I've done with cabbage:

1. Cut up or shred along with thin strips of carrots (achieved with a vegetable peeler), mung bean sprouts, strips of bell pepper...and whatver other "stir fry" veggies you like and marinate in a mixture of nama shoyu or braggs, ginger, little olive oil, little sea salt, garlic or garlic powder and a little cayenne if you like spicy. Then, either allow to sit overnight in fridge or if you want softer, slightly "warmed", spread out marinated veggies on dehydrator for an hour or two and eat!

2. Cole slaw using a homemade dressing. I love mine with cabbage, carrots, a little bit of raisins, celery, onions and whatever dressing (sometimes I use a tahini dressing)

3. ( I know I said a couple, but I just thought of one more :p) Cabbage rolls where you do something similar to what I suggested in #1 but with other veggies and maybe do the parsnip rice (pulse chop parsnips and pine nuts in processor w/ "S" blade until grainy) and roll it all up in cabbage leaves, place on dehydrator for an hour or two or eat as is. Sometimes I massage sea salt and a little oil into the leaves prior to rolling the veggies up in it.

Mix together 1/2 head read or green cabbage, one sliced banana, one sliced orange, one apple, and a handful of raisins. Use 1 Tbsp. flax oil, 1/2 TBSP honey and the juice of an orange for the dressing. It's delicious! (tastes better with red cabbage)
OR
Blend 1/2 cup soaked almonds with 1/2 cup distilled water, sea salt, either 2-3 dates or 1 TBSP honey in the food processor, then add that dressing to 1/2 head green cabbage, 1 diced carrot, 1 diced celery stalk and 1 small diced apple.

I basically do what rawkinlocs mentioned. Shredding the cabbage with a number of other veggies and marinating in some kind of olive oil dressing is a favorite of mine. Coleslaw is also easy and delicious.

I will have to try massaging oil and salt into the larger leaves and using it as a wrap! Thanks for that idea!

I have posted about my love of cabbage before, but here are some hints. Cabbage juice is great for your digestive tract. I also love shredded cabbage as a salad green, with a dressing of avocado mashed with celtic salt and lemon juice. You could sweeten it with orange juice instead, if you think it too bitter. I have grown to love cabbage, and it loves me. (I don't get the gassy bloating that some get when eating it. Not sure why.)

Cabbage is a great slaw ingredient, especially if you mix the colors. Tastes nice on raw pizza. I have been known to eat it like noodles with raw marinara, but then I did that when I used to steam it too....

Okay, thanks for the suggestions y'all. . . I think I'll try the "shred 'n soak" attack, that sounds like a winner. :D

Sauerkraut is really simple to make and tasty too. You can also make kimchi. I don't have instructions with me at work, but it you Google "raw sauerkraut" you're sure to come up with recipes!
