I found a thai cooking website last night that has a quicktime video on it showing how to open a coconut. You basically tap it with the blunt end of a knife and it just cracks open. I was skeptical that it could be that easy but I tried it this morning and it was fast and simple. Here's the website:

Scraping the white meat off the inside of the shell was the hard part though, and bc of the way I was doing it I kept thinking I was going to cut myself by accident. If anyone has any suggestions on the easiest way to do this I'd be much obliged. The website I linked to above says you can put it in the oven to soften everything up but for obvious reasons I'm not gonna do that!

I just opened my first one about 30 minutes ago :) To get the meat out, I just used a fork to pry it out and once I got a little bit loose, most of it came out in one piece as I kept loosening it with the fork.

Thanks. I'll try a fork next time instead of the knife.

hey, you know the thin brown layer that's attached to the white meat part? can you eat that too or do you have to take that off...i usually just eat it too, cause it's attached..hmmmm?

I've never opened one yet, I've seen it done a hundred times, everyone does it differently, I let my hubby do it.

But I was told in my first raw class to NOT eat the thin brown part, I always peel it off with a paring knife.

It certainly makes a smoothy, or frosting look nice and white.

But I never tried just leaving it on, maybe I will try this next time, and see if there is any difference.

Thanks for the tip,
