View Full Version : Fluffy, Airy, Whipped Vegan Cream?

'Way in the back of my cupboard, I found one of those spritzer things that takes a little CO2 cartridge and makes whipped cream. You know like those soda water machines only smaller.

First of all, is the CO2 thing unhealthy ?? It sort of seems like it would be, but I just haven't heard. If it is, then I shouldn't drink club soda, right?

If it is good, then why can't we make a thick almond or cashew milk and put it through the spritzer for a real whip topping? I'd try it, but I don't have any cartridges right now.

Any thoughts? Has anyone tried this? Just think what it would be like if we could aerate nut cream!

I personally think that CO2, is a highly addictive substance, and wouldn't consume it.

I remember when I used to drink pop, and I only liked it when it was fizzy, if it was flat, I woudn't drink it, so I KNOW the CO2 is highly addictive TO ME.

It seems to me that your experience isn't a matter of addiction so much as being accustomed to the soda being a certain way. Soda is normally carbonated, but if it's flat your body thinks that it's old or otherwise "off" and rejects it. If a person normally drank soda that was flat, the carbonated soda would be repulsive to them.

That's my theory at least... more of a psychological addiction than a physical one.

About the soda addiction question:

I am sure that addiction would apply to sugar and/or caffeine in regular sodas.

I don't know about addiction applying to soda water-could be.

I do admit though that since I have been eating almost all raw, my taste for any and all junk food has really really diminished. Pretty well non-existent, thank God. That includes plain club soda, interestingly. I do have one now and then and enjoy it, but before I am half done, I feel bloated and have really had enough.

Back to the Whipped Cream Topping question:

I started looking on the Net for whipped cream recipes using nuts, but then I thought, 'What about coconut? That has a thick cream and stevia and vanilla could be used for flavour.' Oh YES!

Here is what I found so far:

http://www.cookingcache.com/dessert/profiteroleswithwhippedcoconutcreamandcaramelizedb ananas.shtml

http://www.wildernessfamilynaturals.com/coconut_cream.htm

And to make your own coconut cream:

So I guess it looks like we could get a fluffy whipped topping if these work.

I am so excited! Most of the creams that I have seen in Raw books are really full of oil and are not fluffy. They weep oil all over and are just not a really good substitute.

I can tell you that my pop addiction, was not about the sugar or the caffeine, as I drank caffeine free, and I would crave pop until I had it, and I ONLY drank it fresh, it HAD to have the carbination, I coulde easily go without it if it was NOT carbonated, and I have had a theory about this for years, and talked with many pop drinkers, all who were addicted, I mean more than 2 liters a day, needed it with the fizz, the ones who drank less than 2 liters a day, could drink without the fizz, although they didn't like it.

I could get my sugar in many ways, and if I couldnt' get my particular pop of choice with carbonation, I'd drink anything other pop I could get.

I think I know what my addictions are, I've had them for years, and tried and tried to drop them, well, I finally have now and feel great.

So, to the OP, I wouldn't drink anything with CO2 in it, as it is highly addictive. of course, as I said, that is just my opinion.

RP, I'll take your word for it. Why not? I'd certainly rather not defend that junk anyway.

Thanks for your input.

I have always considered myself to be addicted to the "fizz" in sodas--really addicted. My husband even used to comment on it.

Even if CO2 is somewhat addictive, I don't think that's going to be an issue here. In soda, the CO2 is dissolved into water (under pressure), so it's all mixed in, whereas with whipped cream, you're just using the CO2 to aeroate it, so I'd imagine that very little CO2 gas would remain dissolved in the cream.

btw the stuff used to aerate is nitrogen oxide, not CO2, so that won't be a problem anyway. even then the gas only increases the pressure inside the canister, the gas does not actually become incorporated into the whipped cream

Carbon dioxide is definitely unhealthy.

Okay, folks, let's not go crazy here...

EVERYTHING in large, unnatural quantities is toxic to humans. Everything. Even carrots, people. CO2 is a naturally occuring atmospheric gas that is present in every single breath of air you take, as it consitutes about 0.05% of fresh air by volume. As such, your body is quite adept at handling it. In order for it to be toxic, you'd have to breathe air that contains 100 times more CO2 than normal. That's a lot of carbon dioxide! In addition, you actually NEED the stuff -- your red blood cells carry it around to help unload oxygen into your blood.

Naturally occuring carbonated water contains carbon dioxide, and many people drink it without experiencing adverse effects. If you personally feel the need to stay away from any kind of carbonation, due to perceived addictive effects or anything else for that matter, that's great! But let's not go overboard with our fault-finding to the point that we become fear mongers.

You probably just took in some CO2 with that last breath...and that one...and that one...and that one...

Dead yet?? ;)

CO2 occures naturally in young coconuts in the Carribean.

I'd say go old school and do some whippits. ;)

That sounds AWESOME. But.... I don't know if I know what you're talking about completely? Where do you get one, how do you fill it...?
