I make a plate of sliced veggies, like red cabbage, peppers, tomatoes whatever you have ! Sprinkle with celtic, sea or pink himylain salt.

If you plan ahead I like to sprout buckwheat, dry and then mix it with pumkin seeds, dried apple, dried strawberries or other favorites and snack on that.

If you have a dehydrator try kale chips

When I'm craving chips or popcorn, it's usually for the saltiness and crunchiness. So, I make flax crackers in a variety of flavors(I made jalepeno flax crackers yesterday--gotta have my spice!) or veggie crisps on the dehydrator.
You can also soak potatoes, drain them and sprinkle with salt and then dehydrate them.

I made regular and sweet potato chips yesterday. I ended up dehydrating them a bit longer than Alissa's recipe said, as I think I made the slices too think. They are totally yummy!! Soaked them in vinegar, sprinkle of sea salt - that's it!

Today is the first day of my 30 day challenge, so I will be snacking on them!

Thin slices of zucchnni with garlic and onion powder and raw salt of choice.

Wild Oats makes a "salty/ crisp" puffed snow pea, bet you can make a dehydrated version

small mixed veggies ( corn, peas carrots etc..) dehydrated with italian or garlic herb seasonings

I just searched this site for some raw potato chip recipes and it looks like people have come up with some really good ones. But I notice that the startchy flavour was a problem. That got me to thinking if anyone has tried 'eggplant' chips??? Wouldn't they work pretty good? I wouldn't really know because I've never tried dehydrating anything. Any thoughts on usuing eggplant as chips?

I think it sounds like a good experiment. Try it and let us know. I took some sweet potatoes the other day and sliced them up, dipped them in olive oil and sprinkled with sea salt and put them in the dehydrator. THey were pretty good, but by the time they got done, my craving for chips had passed, so I bagged them and are saving them for a rainy day. I discovered a new love the other day, CORN. I have never had raw corn and OH MY. It was sooooo good. I rolled it in olive oil and sea salt and it was divine. It was so crunchy and creamy and sweet. Why would anyone have taught us to cook something like this? It is CRAZY. If I was ever to return to the cooked food world (not that I am) I would never ever cook corn.
