View Full Version : Spinach Pesto with Julienned veggies

I made this the other day and it has become my favorite meal. Easy too.

Pesto

In a blender process together:

2 cloves garlic
3-4 tbsp olive oil (more or less if you like)
Water or soak water from tomatoes
1/4-1/2 cup basil (more or less, adjust to taste)
Handful of pinenuts
Enough spinach to fill the blender 3/4 full.
4-5 sundried tomatoes (soaked)

Add water as needed to ensure it will blend and until it is desired consistency.

Marinated Mushrooms

cubed portobellos and criminis marinated in soy sauce, apple cider vinegar and italian seasoning. (or whatever your favorite marinated mushroom recipe may be)

Julienned Veggies

With a V slicer or food processor slice zucchini, carrots and jicama (or whatever veggies you like)

Mix pesto and veggies together, top with more pinenuts and marinated mushrooms.

That sounds delish. I think the pesto sounds scrumptious, probably would be great on just about anything! I am going to try a raw pesto pizza this weekend, and perhaps I will try your recipe! The veggies would be nice on there.
