How can you tell if organic oats are raw? If organic oats are not raw where can you buy organic raw oats? What is the difference between oats and oats groats?

From what I understand, the groats are raw, or at least most of the time. The other oats, rolled etc.. are heated slightly (steamed?) for storage purposes. Even if they are organic.

I've been told that oats and grain are steamed already in the mill because they contain fat and would become rancid otherwise. That need not to be the case with all oat and grain though but I wonder how its done without steaming.

You can order raw oat groats online. Check mannaharvest.com. My health food store carries oat groats and I asked about them being raw, but they weren't; "raw" would have to have been on the label. I read - sometime after that - that stores won't often carry raw oat groats b/c of the going rancid factor.

Rolled oats are not raw, but you can get oat groats from the health food store or a co-op. Oat groats are the whole oat grain, where rolled oats have been processed.
