We have some sweet potatoes. Does anyone eat these, and if so any favorite ways of eating them? I know in Alissa's book theres a sweet potatoe chip recipe...are these good?

Sweet potato chips are DIVINE!!! If you have a dehydrator, I'd say Definitely make them! YUM! :D

I've made chips and also turned the potatoes into 'noodles' and just had a sauce to put over them.

Yep, the sweet potato chips are good, especially seasoned with chili powder, a little cayenne and other spices.
I also like sweet potate spiralized and with sauce on it! I usually spiralize it and then rinse/drain it to get most of the starch off.
And...I use sweet potatoes as the casing for Alissa's raviolies as well!

How do you make the chips? I've tried it and i guess i sliced them too thick because they were really hard and I couldn't bite them. Needless to say they went in the trash and I havn't tried it since. I just can't seem to get them thin enough.

Are you using a spiral slicer or just a knife? You might need to use a slicer to get them thin enough. I've also heard suggestions to soak potato slices to remove some of the starch... not sure if that would apply to sweet potatoes as well.

Lunar*Fey,
I like making chips with them.
I'll skin them first with a peeler
next using that same peeler skin off thin long slices until you've gone through the whole thing.
next soak them in olive oil
next sprinkle on sea salt and basil or thyme or both and a little ground garlic.
next stick them in the dehydrator until they're crispy
next eatem :D

I don't know if regular potatos will work the same way. When I was making the sweet potato's I could eat them raw, ( before sticking them in the hydrator), and they taste good to me that way. But I tried a slice of a regular potato and it tasted terrible  . I also stuck a sweet potato in the FP with some basil and sea salt and olive oil and zuccihinni, (sp?) and ate it that way to. But when I tried a regular potato it didn't taste very good.

maybe if you mix them with some other veggies? Go ahead and experiment with them - see what happens?

Thanks for the great ideas everyone!
Can the chips be made by just putting slices into the dehydrator or do I have to use olive oil and spices (I don't have any)??
And Rawkinlocs that's a great idea to make alissa's raviolis with them!! :D
