Does anyone else love this little tuber? I've been on a jicama kick for about a week now, I'm eating them every day :D

I just finished a blended salad, which, according to this old post, the only thing I could find on the search, are not too popular...

I LOVE blended salads - ever since going raw the very first time 2 years ago, I have eaten them nearly daily. So I'll share my blended salad from this evening, featuring the demure jicama :p

No pictures because if you have ever had a blended salad you'll know how unappetizing these babies can look.. but on the palate, ah, this is another matter entirely!!! :D

Blend in food processor to desired texture/consistency:

1/2 large jicama
2/3 large cucumber
juice of 1/2 to 1 lime
3 handfuls microgreens
1 big handful mint leaves
1 generous tbsp. raw almond butter

*optional spices - ground cumin, cayenne, sea salt

It tastes so clean and fresh and now I feel super clean and re-freshed!!
Try it if you're feeling brave, you might just become a blended salad convert... or maybe I'm just totally nuts :eek: :D

You could make that as a regular salad to make it more appealing to the eye. Just chop up the jicama and cucumber, serve over the greens & mint, and blend up the lime juice, almond butter, and spices as a dressing.

That's true...

I'm so used to blending my salads without giving it a thought! I think I like that I don't have to chew for so long.... when a big salad is a meal, I call 'em "10 Pound Salads", it can take an hour just to munch through ... which I do enjoy doing on the deck when the sun is out and the breeze.. mmm. Yeah. That' the real reason I blend. Less chewing! :D

Also though I find it way easier to eat enough greens and vegetable which I would otherwise probably not eat due to all that chewing involved, and I feel better including a lot of cucumber, tomatoes and greens...

However I avoid blended salads when my grandma comes over because she loses her appetite looking at my bowl of ... mush :p

I need to try this stuff... really! I have heard so much about this veggie that I want to try it. Where I can get this stuff? The places I go don't sell this! :(

It's just at my normal grocery store, in with the other root veggies. Ask someone in your local produce department... maybe you've just overlooked it, or maybe they can order it for you. :)

I actually get my jicama from the local Stop and Shop grocery store and sometimes Wild Oats carries it. It adds such a nice crunch to salads especially with avocado....!! YUMMY

It's worth the purchase!!

Ahhhh...jicama!

Buy small ones, about the size of your palm or thereabouts. The larger ones aren't as good. Small ones are juicy, crunchy, sweet/nutty and totally addictive!

I love jicama. It reminds me of an apple, just not as sweet. I love them in salads or just plain as a snack.

Jicama are SO good!!!! I usally make a Mock potato salad with them.

Here's a yummy recipe! It's really good served with spicy foods.

JICAMA SLAW

Active time: 30 min Start to finish: 30 min

1 medium red onion, finely chopped (3/4 cup)
1 1/4 teaspoons salt
21/2 tablespoons fresh lime juice
1/3 cup extra-virgin olive oil
1 teaspoon sweetener of choice
1/4 teaspoon black pepper
2 1/2 lb jicama, peeled and cut into julienne strips (9 to 10 cups)
1/3 cup finely chopped fresh cilantro

Soak onion in 1 cup cold water with 1/2 teaspoon salt 15 minutes (to
make onion flavor milder). Drain in a sieve, then rinse under cold water
and pat dry.

Whisk together lime juice, oil, sweetener, pepper, and remaining 3/4
teaspoon salt in a large bowl until combined well. Add onion, jicama,
cilantro, and salt to taste and toss well.

Cooks' note:
• Jicama can be cut into julienne strips 6 hours ahead and chilled,
covered.

Makes 8 servings.

I love jicama, but we're jicama challenged here in Canada. I used to eat them all the time in L.A. and Mexico, but I can't get them at all locally, and at whole foods in Toronto they've cost about 8-9 bucks a piece :eek: , sold by weight.

wow, all these jicama recipes sound really delicious!

I don't jicama here, could I replace it with anything that is available in Northeast Asia (China)? Does anyone have an idea?

I was wondering the same thing, madmel... Well, if it's kinda sweet, crunchy and juicy, I was thinking of maybe replacing it with yacon?

I was at the store yesterday and there was a jicama that was 6 lbs....LOL it was HUGE!!!!!!! :eek: that was the biggest one i've seen... Anyone know how big they get???

I made the Jicama slaw this morning to take as a 'side sampler dish' for my Raw Basics Food Demo tonight ... and that slaw is AWESOME. Now I'm wishing I had more jicama so I could make another batch for me! Thanks for posting it!
